3/4 cup peanut butter (I also used Trader Joe’s mixed nut Butter.)
Line a pan with parchment paper and set aside.
In a medium saucepan, combine the butter, brown sugar and vanilla extract. Heat over low heat until the butter has melted and the sugar has dissolved. Add the oats, cinnamon and salt and cook, stirring constantly for 4 – 5 minutes. (I did about 4 1/2 minutes.)
Pour half the oat mixture into the pan.
Melt the peanut butter and chocolate chips in a microwave safe dish.
Pour almost all the pb and chips mixture on top of the oatmeal. Top with remaining oatmeal mixture and refrigerate for 4 hours or so.
Delicious dessert and so easy to make. You can always add your favorite inclusions such as white chocolate chips and pretzels.
