Shrimp with Grits
Now for a recipe that will be healthy, nutritious and looks stunning.
Ingredients: Shrimp, onions, Arugula, and grits,
Place rinsed arugula on the bottom of a dinner plate. In the meantime, cook grits following the package directions. You could also use riced cauliflower or riced cauliflower mixed with grits. The grits will go on top of the arugula. Now it is time to saute the shrimp and red onions. Start with the red onions after about 5 minutes add the shrimp. Saute 7 minutes total (about 3 and 1/2 minutes on each side). Season with dry white wine or a little water if needed. Assemble the dish: arugula, grits and shrimp. Quite easy and delicious.
