Peanut Butter Bars

Ingredients for Bars:

1/2 Cup unsalted butter, melted

1 Cup peanut butter, room temperature is easiest to bake with

1 1/2 Cups light brown sugar

2 large eggs

2 teaspoons vanilla extract

1 3/4 Cups flour – I used a mixture of flours including gluten free from King Arthur

1 1/2 teaspoons baking powder

1/4 teaspoon salt

Icing:

6 tablespoons unsalted butter

1/2 Cup peanut butter

1/4 Cup milk

1/2 teaspoon vanilla extract

2 Cups powdered sugar

Preheat oven to 350°. Line and grease parchment paper to fit a 9 x 13 pan.

Mixing the bars is very simple. In large bowl, whisk butter and peanut butter until combined. Add brown sugar. Add eggs and vanilla, be sure to scrape the sides of the bowl as needed.

Add flour, baking powder and salt to the wet ingredients. Stir until combined. The batter will be thick.

Place dough into the prepared pan. Bake for 17 – 20 minutes, until light golden brown.

Icing: Place the saucepan with butter, peanut butter and milk over medium heat. Stirring frequently bring the mixture to a simmer, then remove from the heat. Immediately stir in vanilla extract and powdered sugar, stirring until smooth and combined. Pour over the warmed bars and spread into an even layer. Top with chocolate chips.
