Enchilada Stovetop Bake

3/4 Cup black beans

1/4 cup cheddar cheese

1/2 pound turkey meat

1 teaspoon taco seasoning

4 – 5 corn tortillas (cut into wedges)

1/2 cup corn

3/4 Cup Red enchilada sauce

2 green onions

Cook the turkey meat until no pink remains. Add the green onions. Usuallly takes 4 – 6 minutes to fully cook. Once cooked add enchilada sauce, corn, seasoning blend. Simmer about 4 minutes.

Stir tortilla wedges and black beans into hot pan. Spread into an even layer and top evenly with cheese. Place hot plan into oven and bake approximately 5 minutes.

Serves 2 Delicious and Best Ever.
