Chocolate Walnut Cookies
6 oz 70% Cacao Bittersweet Chocolate
2 Tablespoons (1/4 stick) butter
2 large eggs
7/8 Cup sugar
1/4 teaspoon salt
1/4 Cup all-purpose flour
1/4 teaspoon baking powder
1/2 Cup walnuts
Melt chocolate and butter. In mixing bowl beat eggs, sugar, and salt at high speed for 2 -3 minutes. Add melted chocolate and butter.
Mix in flour and baking powder. Scrape sides then add in walnuts. Cover bowl with plastic wrap and chill until firm enough to scoop – at least 30 minutes.
Preheat oven to 350°. Line baking sheet with parchment paper. Scoop or drop heaping spoonfuls onto lined baking sheets. Bake 12 minutes until puffed and crinkled on top but soft in center.
Delicious cookies. The walnuts are crunchy and the insides are soft and chewy!
