Fuyu Persimmon Bread

1 large egg, room temperature1/2 cup granulated sugar1 1/2 tsp real vanilla extract2 cups fuyu persimmon pureed 5 Tbsp unsalted butter, melted1 tsp baking soda1/8 tsp salt1 tsp cinnamon1 1/2 cups all-purpose flour 1 cup walnut pieces, toasted Toast walnut pieces on a dry skillet until aromatic 

Scones

Chocolate chip and blueberry scones

4 Tablespoons chilled butter

1 3/4 cups self-rising flour (Self rising flour has 1 1/2 teaspoons baking powder and 1/4 teaspoon salt added)

2 1/2 tablespoons granulated sugar

1 large egg

approx 2/3 cup milk

Preheat oven to 425°. Lightly butter a baking sheet.

put the flour in a bowl and rub in the butter with your fingertips until the mixture resembles fine bread crumbs.

Break the egg into a oiquid measuring cup and make up to 2/3 cup with mile. Beat lightly to mix and add to the bowl and mix to a soft dough.

Lightly knead the dough on a floured work surface until smooth. As the dough is being rolled out divide dough in half. Add a few chocolate chips to one half and a few fresh blueberries to the other half. Roll or pat our until 1/2 in thick, cut into rounds with the top of a round drink glass. Bake about 10 minutes.

Nut Cereal

Ingredients 1 cup pumpkin seeds 1 cup cashews 1/2 cup walnuts 2 cups pine nuts 1 cup almonds All nuts can have extra amounts or they can be reduced according to your preferences. Stir nuts. Add 1/3 cup maple syrup. I used my favorite maple 

Apple Cider Cake

For the Cake:

1 cup apple cider

2 cups Granny Smith apples – Peel and cut each apple and place in a bowl of water that has a whole lemon squeezed into it.

1 whole lemon

1/4 cup butter, softened

1 cup granulated sugar

2 eggs

2 cups flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking powder

1/2 baking soda

1/4 teaspoon salt

1/2 heavy cream

1 teaspoon cinnamon

3 tablespoons granulated sugar

Place the first cup of apple cider on the stove and bring to a boil and boil until reduced to 1/4 cup. Cool

Heat oven to 350°

Stir butter and sugar until well mixed. Add eggs – one at a time. Measure out cream and add reduced cider to cream. In a medium bowl, sift flour baking powder, baking soda and salt.

Add the 1/3 flour mixture in with the butter and sugar. Then add 1/2 the cream mixture. Continue alternating and addiding each mixture until finished.

Pour into a 9 x 9 square pan and bake for approximately 55 minutes. Place the apples on top of the cake before baking.

For the Glaze:

2 tablespoons apple cider

1 cup confectioners’ sugar

1 – 2 tablespoons heavy cream

Place glaze on top if desired. Enjoy!

Blueberry Crumb Cake

1 cup all-purpose flour 1 cup almond flour 1 tablespoon baking powder 1/2 teaspoon salt 1/2 teaspoon baking soda 1 cup sour milk 1/2 cup butter, melted 2 eggs, beaten 2 tablespoons lemon juice 2 cups frozen blueberries Preheat oven to 350. Grease an angel 

Chocolate Small Bite Sized Cookies

3/4 Cup sugar

1/3 Cup cocoa powder

1/4 Cup butter

1/2 Cup peach (mashed) or use applesauce

1 teaspoon vanilla

1 3/4 Cup flour

1 teaspoon baking powder

1/4 teaspoon salt

2 Tablespoons powdered sugar

  1. Preheat oven to 375°F.
  2. Place sugar, cocoa powder and butter in a medium bowl; stir well with a spoon. Add peach and vanilla; beat to blend.
  3. In another small bowl, stir together flour, baking powder and salt. Stir flour mixture into cocoa batter with a wooden spoon.
  4. Shape batter into evenly sized balls with your hands; place 1-inch apart on prepared cookie sheets. Bake until set, about 8 minutes. Sprinkle with powdered sugar when cool.

Almond Butter Granola Bars

3 Cups rolled oats 1/2 Cup Almond Butter 1/2 Cup jelly ( I used fig and berry.) 1/4 Cup of hot water Pinch of salt This recipe was inspired from Peanut Butter and Jelly Granola Bars found on Good Cheap Eats: Eat Well on $4/Day
