Almond Butter Granola Bars
3 Cups rolled oats
1/2 Cup Almond Butter
1/2 Cup jelly ( I used fig and berry.)
1/4 Cup of hot water
Pinch of salt
This recipe was inspired from Peanut Butter and Jelly Granola Bars found on Good Cheap Eats: Eat Well on $4/Day by Leanne Brown.
Preheat oven to 350 degrees. Line a 8 1/2 x 11 inch pan with parchment paper.
Place oats in a bowl. Set aside. Over a low burner add almond butter, 1/2 jam, water, and salt. Stir for 2 minutes. Remove from heat and add any other ingredients. We added chia seeds, hemp seeds and pecans. Add entire mixture to the oats. Mix well. Place in pan and put the other half of jam on top. I used half fig for inside the recipe and half berry for the top. Place the pan in the oven and bake for 25 minutes.
Cool completely in the pan before cutting into bars.
