Pumpkin Shortbread

1/2 C butter 1 C flour 1/3 C sugar 1/4 teaspoon of vanilla 1/3 C flour 1/2 teaspoon baking powder 1/4 teaspoon salt 1 C packed brown sugar 1 C canned solid pack pumpkin 1 teaspoon vanilla 2 eggs 1/2 C walnuts 1 C flour 

Peanut Butter Chocolate Chip Oatmeal

(Just a few of my favorite ingredients)

3 C. oats

1 1/2 C. milk

1/2 C. peanut butter

1/4 C. applesauce

2 large eggs

3 T. packed light brown sugar

1 tsp. baking powder

1 tsp vanilla

1/2 salt

1/4 choc. chips

Combine oats, milk, 1/4 C. peanut butter, applesauce, eggs, brown sugar, baking powder, vanilla and salt in a large bowl. Fill each muffin cup with a heaping Tablespoon of bater, then add peanut butter and chocolate chips. Cover with the remaining batter. Bake until a toothpick inserted in the center comes out clean. About 25 minutes. Oven temperature 375°

Cookies with a Chocolate Layer

Oven preheat at 350° In a medium saucepan over low heat, combing sweetened condensed milk, chocolate chips, butter and salt. Cook, stirring often until melted and then remove from heat. In another bowl, mix flour (I used gluten free flour) oats, baking powder and salt.

Crispy Brussels Sprouts

2 lbs brusssels sprouts

2 Tablespoons olive oil

5 large garlic cloves grated on a microplane

1/2 teaspoon sea salt

ground black pepper

Preheat oven to 400 degrees. Lightly oil the baking sheet.

Trim the stems off the brussels sprouts and slice the sprouts in half. Small sprouts, leave as is.

In a small bowl, whisk together the oil and garlic until combined. Add brussels sprouts and toss until completely combined. Then place on an even layer on the pan and season with the salt.

Roast for 15 minutes. Turn sprouts over and roast 15 more minutes. Serve immediately.

Fried Apples

1 – 2 apples – sliced and cored

2 Tablespoons brown sugar,

cinnamon – a few shakes

butter to grease pan

a splash of apple cider vinegar

Roll apples slices in sugar and spices. Fry until tender, juicy, and soft. Lower the heat, add cider. Apples will become soft in about 15 minutes. Enjoy!

Oat Muffins

2/3 cup milk 1/4 cup oil 1/2 cup brown sugar 1 egg 1 cup semolina flour 1 cup oats 1 tablespoon baking powder 3/4 teaspoon cinnamon 1/4 teaspoon salt 1/2 cup dried blueberries Combine all ingredients. Bake in lined muffin tins 15 minutes at 400°.
